Morning Glory Muffin Recipe

2 cups flour

1 1/3 sugar

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

2 tsp baking soda

1 cup vegetable oil (I use canola)

2 tsp vanilla extract

3 eggs

2 cups carrots, grated

1 apple, grated

1/2 cup raisins

1 cup nuts (optional)

1/2 cup coconut

Mix the dry ingredients; add oil, vanilla, eggs. Don't overmix. Then add remaining ingredients and blend. Fill greased muffin tins or liners almost full. Bake for 20 minutes at 350. Makes 2 dozen.

** I add cream cheese frosting, but it's optional. 1 stick butter, 1package cream cheese and 2tsp vanilla. It makes a lot so I usually cut the recipe in half.
